A plain jane diet... I know.. just the way I like it! It will make meal prep and Grocery shopping very simple.

I will also be substituting chicken instead of tuna several times per week, as well as mixed veggies, peppers, salad, asparagus, onions/mushrooms occasionally substituted for the spinach at dinner.
 
That diet above is not anything set in stone... it's just a VERY basic guideline.

I wish I was one of those people who just looked at food as fuel, but I grew up on a farm where meals were a ritual and an integral part of our day. I applaud your discipline but I'd lose my mind trying to eat like that for 8 days, let alone 8 weeks!

Don't get me wrong, I LOVE food more than most and never waste anything - I eat all the fat on my steak, I save/reuse my bacon grease, I eat the apple and the core, I eat the kiwi and the skin... a little mold no worries, I'll eat around it or try to scrape it off the top and salvage the rest. lol

It's really not too bad, I get to eat 5 - 6 times per day - and I love to cook (not too bad either) so it makes it much more enjoyable sampling and flavoring, experimenting to find no recipes and ways to season etc... it's all fun for me.
 
I'm gonna have to move the start date of this Log back a few weeks.. perhaps to July. I don't have the time to really focus on a hardcore cut.. I have o stay focused on my Conductor training for Amtrak.
